This Easy Simple Mango Pudding is a delightful dessert that perfectly balances the sweetness of ripe mangoes with creamy coconut milk. A refreshing treat that is easy to make and sure to impress!

			Ripe Mango Puree:
- 12 oz fully ripened and tender mangoes, peeled, pitted, and diced
 
Gelatin Mixture:
- 2 tbsp cold water
 - 1.5 tbsp gelatin or 1.5 tsp agar agar powder for a vegan version
 - 1.5 tbsp white granulated sugar
 - 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk
 
Serve with:
- 4 tbsp evaporated milk or coconut milk for a vegan version
 
Instructions
- Ripe Mango Puree: Transfer mango chunks to a blender or food processor and blend into a smooth puree. Strain for extra smoothness.
 - Gelatin Mixture: Mix cold water and gelatin to thicken. Add sugar, coconut milk, and mango puree. Whisk until smooth.
 - Combine Ingredients: Heat the mixture in a pot until gelatin dissolves. Do not boil. Pour into serving bowls or mold.
 - Chill: Refrigerate for at least 6 hours or overnight until set.
 - Serve: Enjoy with evaporated milk or coconut milk.
 
Notes
- For a vegan version, use agar agar powder and coconut milk for both pudding and serving.
 - Ensure the mango puree is very smooth for a creamy texture.
