Shrimp:
- 1 pound shrimp
Seasoning:
- 2 Tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 1/2 Tablespoons Cajun seasoning, divided
Veggies:
- 1 large zucchini, sliced
- 2 bell peppers, cubed
Instructions
- Toss shrimp: In a bowl, combine shrimp with 1 tablespoon of oil, garlic, and ½ tablespoon of Cajun seasoning. Set aside.
- Cook vegetables: Heat remaining oil and seasonings in a large pan over medium heat. Add the vegetables and cook for 4-5 minutes. Remove and set aside in a bowl.
- Cook shrimp: Add the seasoned shrimp to the pan and cook until pink and cooked through, about 5 minutes.
- Combine: Return the vegetables to the pan and cook until heated through, about 3-4 minutes.
