Batter:

  • 1/4 cup butter
  • 1/2 cup flour
  • 1 cup sugar (divided)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 1 egg
  • 1/4 tsp vanilla

Filling:

  • 2 cups peeled peaches (if frozen, thaw and drain juice)
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar

Serving:

  • Ice cream for serving (optional)

Instructions

  1. Preheat oven to 350°F. Place butter in a 9-inch glass dish and melt in the oven.
  2. Mix flour, 2/3 cup of sugar, baking powder, and salt in a large bowl. Add milk and egg, stir to combine. Pour batter over melted butter in the dish – DO NOT STIR.
  3. In a separate bowl, combine peaches, 1/3 cup sugar, vanilla, cinnamon, and nutmeg. Spoon peaches over the batter – DO NOT STIR.
  4. Sprinkle brown sugar over the top.
  5. Bake for 40-45 minutes until golden brown. Finish under the broiler for extra crispness. Serve warm with ice cream.
