This easy homemade vegan donut recipe combines wholesome ingredients like chickpea flour, rice flour, and maple syrup to create delicious and light baked donuts, topped with a zesty lemon icing and optional blackberry chia jam for a perfect treat.

			Donut:
- 1 cup chickpea flour
 - 1/2 cup brown rice flour
 - 2 tbsp arrowroot powder
 - 1 tsp baking powder
 - 1 tsp baking soda
 - pinch salt
 - 1/3 cup maple syrup
 - 1/2 cup unsweetened apple sauce
 - 3 heaping tbsp meyer lemon juice
 - 1 tsp raw apple cider vinegar
 - 1 tsp vanilla extract
 
Icing:
- 1/2 cup organic powdered sugar
 - 8 tsp lemon juice
 
Blackberry Chia Jam:
- 1/2 cup frozen or fresh blackberries
 - 1/4 cup filtered water
 - 1–2 tbsp maple syrup
 - 1 tbsp chia seeds
 
Instructions
- Preheat your oven: Preheat the oven to 350°F while you prepare your batter.
 - Mix wet ingredients: In a large bowl, whisk together maple syrup, apple sauce, lemon juice, apple cider vinegar, and vanilla extract until smooth.
 - Combine dry ingredients: Sift in chickpea flour, rice flour, arrowroot powder, baking powder, baking soda, and salt. Use a spatula to combine the mixture until smooth. It may poof up slightly, which is normal.
 - Fill donut molds: Transfer your batter into a donut mold, using a piping bag or spoon. Remove any air bubbles using a toothpick to ensure even baking and avoid craters.
 - Bake the donuts: Bake for 15-17 minutes. Use a toothpick to check if they’re cooked through (toothpick should come out clean). Adjust baking time as needed; 16 minutes is typically ideal for silicone molds.
 - Prepare icing: While the donuts are baking, combine powdered sugar and lemon juice in a small bowl. Mix until smooth to make the icing.
 - Prepare chia jam: For the jam, add blackberries, water, and maple syrup to a covered saucepan on low heat. Allow the blackberries to burst, then mash them using a spatula. Stir in chia seeds, remove from heat, and let it thicken.
 - Cool and decorate donuts: Once baked, remove donuts from the mold and cool completely. Dip each donut into the prepared icing and let excess icing drip off using a cooling rack.
 - Add chia jam: Spoon chia jam into the center of each donut if desired. To avoid sogginess, add the jam right before serving.
