  • 1/3 cup maple syrup
  • 1/2 cup unsweetened apple sauce
  • 3 heaping tbsp meyer lemon juice
  • 1 tsp raw apple cider vinegar
  • 1 tsp vanilla extract

Icing:

  • 1/2 cup organic powdered sugar
  • 8 tsp lemon juice

Blackberry Chia Jam:

  • 1/2 cup frozen or fresh blackberries
  • 1/4 cup filtered water
  • 12 tbsp maple syrup
  • 1 tbsp chia seeds

Instructions

  1. Preheat your oven: Preheat the oven to 350°F while you prepare your batter.
  2. Mix wet ingredients: In a large bowl, whisk together maple syrup, apple sauce, lemon juice, apple cider vinegar, and vanilla extract until smooth.
  3. Combine dry ingredients: Sift in chickpea flour, rice flour, arrowroot powder, baking powder, baking soda, and salt. Use a spatula to combine the mixture until smooth. It may poof up slightly, which is normal.
  4. Fill donut molds: Transfer your batter into a donut mold, using a piping bag or spoon. Remove any air bubbles using a toothpick to ensure even baking and avoid craters.
  5. Bake the donuts: Bake for 15-17 minutes. Use a toothpick to check if they’re cooked through (toothpick should come out clean). Adjust baking time as needed; 16 minutes is typically ideal for silicone molds.
  6. Prepare icing: While the donuts are baking, combine powdered sugar and lemon juice in a small bowl. Mix until smooth to make the icing.
  7. Prepare chia jam: For the jam, add blackberries, water, and maple syrup to a covered saucepan on low heat. Allow the blackberries to burst, then mash them using a spatula. Stir in chia seeds, remove from heat, and let it thicken.
  8. Cool and decorate donuts: Once baked, remove donuts from the mold and cool completely. Dip each donut into the prepared icing and let excess icing drip off using a cooling rack.
  9. Add chia jam: Spoon chia jam into the center of each donut if desired. To avoid sogginess, add the jam right before serving.
