For the Crust

- 1/4 cup granulated sugar
- 1 tbsp lemon zest (grated on a Microplane)
- 1 tsp vanilla extract
- 1 cup gluten-free all-purpose flour
- 1/8 tsp kosher salt
For the Filling
- 3 eggs at room temperature
- 1 cup granulated sugar
- 1/2 cup lemon juice freshly squeezed
- 1 tbsp lemon zest (grated on a Microplane)
- 1/2 cup gluten-free all-purpose flour
- 1/8 tsp kosher salt
Powdered sugar for garnish
Instructions
- Preheat the oven: Preheat the oven to 350°F. Grease an 8×8-inch baking dish and line with overlapping rectangles of parchment paper.
- Prepare the Crust: In a large bowl, beat together butter, sugar, lemon zest, and vanilla. Add flour and salt, mix until uniform. Press into baking dish, poke holes, then bake.
- Make the Filling: Beat eggs, sugar, lemon juice, zest, flour, and salt until smooth. Pour over crust and bake until set.
- Cool and Serve: Cool in the pan, then transfer to a wire rack. Dust with powdered sugar, slice, and serve.

- For a more intense lemon flavor, add extra zest to the filling.
