Description

This Easter Snack Mix is a festive and fun treat that’s perfect for Easter gatherings, parties, or a sweet and salty snack any time of year! A colorful mix of cereals, pretzels, nuts, and M&Ms is coated in melted white chocolate and sprinkled with shredded coconut, creating a delightful and addictive snack that’s easy to make and sure to please a crowd.


Ingredients

  • 3 cups white chocolate chips
  • 1 tablespoon coconut oil (optional)
  • 4 cups multigrain Cheerios
  • 4 cups Rice Chex cereal
  • 2 cups pretzel sticks
  • 1 cup roasted cashews, optional
  • 1 9ounce bag peanut butter M&M eggs
  • 1 cup pastel milk chocolate M&M’s
  • 1/2 cup shredded, sweetened coconut
  • Extra white chocolate chips, for topping (optional)

Instructions

  1. Prepare Baking Sheet:
    1. Line a baking sheet with parchment paper.
  2. Melt White Chocolate:
    1. Place the white chocolate chips and coconut oil (if using) in a microwave-safe bowl.
    2. Microwave for 30 seconds at a time, stirring after each interval, until the chocolate is melted and smooth.
    3. Note: If you don’t have coconut oil, you can leave it out. It helps the white chocolate firm up a bit more, but it’s not essential.
  3. Combine Dry Ingredients:
    1. Mix the Cheerios, Chex, pretzel sticks, and cashews (if using) on the baking sheet.
    2. Toss them gently to combine.
  4. Add M&M’s:
    1. Add half of each version of M&M’s (peanut butter and pastel milk chocolate) to the mix.
  5. Drizzle with White Chocolate:
    1. Drizzle the melted white chocolate mixture all over the dry ingredients.
  6. Toss to Coat:
    1. Use a spatula or large spoon to gently (and somewhat quickly) toss the mix together until all the pieces are coated with the white chocolate.
  7. Add Remaining M&M’s and Coconut:
    1. Sprinkle in the remaining M&M’s and gently toss once more.
    2. If desired, sprinkle the entire sheet with the shredded coconut.
    3. You can also sprinkle on more white chocolate chips, if you wish.
  8. Set:
    1. Let the mixture set for 20 to 30 minutes, or until the chocolate has hardened.
  9. Store:
    1. Transfer to a large bowl or jar that you can cover, or a resealable plastic bag.
    2. You can definitely make this a day or two ahead of time!

Notes

  • Adjust the ingredients to your preferences. You can use different types of cereal, nuts, or candy.
  • For a festive touch, use Easter-themed sprinkles or other candies.
  • Be gentle when tossing the mix to avoid breaking the cereal and pretzels.
  • If the white chocolate starts to harden before you’re finished coating the mix, you can microwave it again for a few seconds.
  • Store in an airtight container at room temperature for up to a week.
