Ingredients

Units Scale
  • 16 tablespoons (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar + 1 tablespoon
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 1/4 teaspoons vanilla extract
  • 1/4 teaspoon fresh lemon juice
  • 2 1/4 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Pinch of ground cinnamon
  • 2 2/3 cups semi-sweet chocolate chips
  • 1 3/4 cups walnuts, chopped

Instructions

  • Cream Butter and Sugars: In a large bowl or stand mixer, cream together softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy.
  • Add Eggs and Flavorings: Beat in eggs, vanilla extract, and lemon juice until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  • Add Dry to Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Fold in Chips and Nuts: Fold in chocolate chips and walnuts using a spatula.
  • Scoop and Bake: Preheat oven to 300°F (150°C). Line baking sheets with parchment paper. Use a large cookie scoop (3 tablespoons) to portion dough onto prepared baking sheets. Bake for 20 minutes, or until golden brown and the edges are set.
  • Cool: Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Softened Butter: Soften butter properly by cutting it into tablespoons and letting it sit at room temperature.
  • Flour: Measure flour accurately to avoid dry cookies.
  • Mixing: Avoid overmixing the dough to prevent tough cookies.
  • Lemon Juice: The acidity in lemon juice helps activate the baking soda for a better rise.
  • Baking Time: Adjust baking time based on your oven and desired cookie texture.
  • Cookie Size: Adjust baking time if using a smaller cookie scoop.
