Bacon:
- 5oz (150g) bacon, cut into strips
Creamy Broccoli:
- 2 tablespoons unsalted butter
- 2 pounds (1kg) broccoli florets
- 1/2 teaspoon salt and fresh cracked pepper
- 1 teaspoon paprika
- 5 cloves garlic, minced
- 3/4 cup (180ml) heavy whipping cream
- 2 tablespoons cream cheese
- 1/4 cup (60ml) chicken or vegetable stock
- 1/2 cup fresh grated parmesan cheese
- 1/2 cup grated mozzarella
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Fry Bacon: Fry bacon in a large oven-safe skillet until crispy. Transfer to a paper towel-lined plate.
- Sauté Broccoli: Melt butter in the skillet, add broccoli, salt, and pepper. Cook for about 6 minutes.
- Add Ingredients: Stir in garlic, cream, cream cheese, stock, half of the cheeses, and paprika. Simmer on low for 3-4 minutes.
- Combine and Bake: Mix in bacon, top with remaining cheeses. Bake for 15 minutes until bubbly and broccoli is tender. Broil for 2 minutes for a crispy top.
- Finish and Serve: Remove from oven, season with pepper, and sprinkle with parsley. Enjoy!
