Description

This hearty Cowboy Stew is a delicious one-pot meal brimming with bacon, sausage, ground beef, and a medley of beans and vegetables, creating a flavorful and comforting dish perfect for gatherings or weeknight dinners.


Ingredients

Bacon:

4 slices bacon, chopped

Kielbasa Sausage:

2 (12-ounce) package kielbasa sausage, cut into 1/2 inch slices

Ground Beef:

1 1/2 pounds ground beef, 80/20

Onion:

1 medium onion, diced

Garlic:

3 cloves garlic, minced

All-Purpose Flour:

3 tablespoons

Salt:

1 1/2 teaspoons

Black Pepper:

1/2 teaspoon

Chili Powder:

1 teaspoon

Petite Diced Tomatoes:

1 (14.5-ounce) can, with liquid

Baked Beans or Ranch Beans:

2 (16-ounce) cans, with liquid

Chopped Green Chilies:

1 (7-ounce) can, with liquid

Sweet Corn:

1 (15-ounce) can, with liquid

Russet Potatoes:

2 medium russet potatoes, peeled and cut into 1/2 inch cubes

Water:

1 cup

Parsley:

2 tablespoons, chopped


Instructions

  1. Cook Bacon: Cook bacon in a large pot until brown and crispy. Transfer bacon to a paper towel-lined plate to drain.
  2. Brown Sausage: Brown kielbasa sausage in the pot drippings on both sides. Remove and set aside.
  3. Cook Beef: Brown ground beef, onion, and garlic in the pot. Sprinkle flour, salt, pepper, and chili powder over the beef and cook for 1 minute.
  4. Add Ingredients: Add diced tomatoes, baked beans, green chilies, sweet corn, potatoes, bacon, sausage, and water to the pot. Bring to a boil, then simmer covered for 1 hour, stirring occasionally.
  5. Garnish: Garnish with chopped parsley before serving. Add more water if needed for desired consistency.

Notes

  • This stew can be served with a side of crusty bread or over cooked rice for a complete meal.
