Description

This Cowboy Casserole is a hearty and satisfying dish that’s perfect for a crowd-pleasing meal. It features layers of seasoned ground beef, beans, corn, a creamy sauce, and crispy tater tots, all baked together to golden perfection.


Ingredients

  • 6 slices bacon, cut into small pieces
  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (1 ounce) packet taco seasoning
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1 (14-ounce) can black beans, drained and rinsed
  • 1 (12-ounce) can corn, drained
  • 1 (4 ounce) can diced green chilies
  • 2 cups shredded cheddar cheese, divided
  • 32 ounces frozen tater tots
  • Salt and pepper, to taste
  • Chopped scallions, for serving (optional)

Instructions

  • Preheat and Cook Bacon: Preheat oven to 375°F (190°C). Cook bacon in a skillet over medium heat until crispy. Remove bacon and set aside, leaving bacon fat in the pan.
  • Brown Beef and Season: Add ground beef and onion to the skillet and cook until browned. Drain excess fat. Stir in garlic and taco seasoning.
  • Combine Ingredients: Remove from heat and stir in condensed soup, sour cream, black beans, corn, green chilies, half of the bacon, and ½ cup of the cheese.
  • Assemble and Bake: Transfer the mixture to a greased 9×13 inch casserole dish. Top with remaining cheese, bacon, and tater tots. Bake uncovered for 45 minutes, or until tater tots are golden brown and cheese is melted and bubbly. Broil for a few minutes at the end for extra crispiness, if desired.
  • Serve: Garnish with chopped scallions, if using, and season with salt and pepper to taste. Serve hot.

  • Tater Tots: Use a 32-ounce bag of tater tots or adjust the amount as needed.
