Description

This Cilantro Lime Salmon is a flavorful and easy-to-make dish that’s perfect for a weeknight meal. The salmon is baked with a vibrant citrus marinade and a touch of spice, then broiled to perfection for a beautiful finish.


Ingredients

  • 1 lime, cut into slices
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup unsalted butter, melted
  • Juice of 2 limes
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 2 pounds salmon fillet (1 large fillet)
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Line a baking sheet with aluminum foil. Arrange lime slices on the foil.
  2. Make Rub and Marinade: In a small bowl, combine paprika, chili powder, salt, and pepper. In another bowl, whisk together melted butter, lime juice, honey, and garlic.
  3. Season and Bake: Rub the salmon with the spice mixture on both sides. Place the salmon on the lime slices. Pour the honey-lime marinade over the salmon. Fold the sides of the foil up to create a well, preventing the marinade from spilling.
  4. Broil and Serve: Bake for 15-20 minutes, then switch the oven to broil and cook for an additional 5 minutes, or until the salmon is cooked through and slightly caramelized on top. Garnish with chopped cilantro and serve immediately.
