Description

Instructions

  1. Prepare Ganache: In a medium heatproof bowl, combine the chopped dark chocolate and butter. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate mixture and let it sit undisturbed for 5 minutes to soften the chocolate. Then, whisk until the mixture is smooth and glossy. Cover and refrigerate until firm, about 1 hour.
  2. Form Truffles: Line a large baking sheet with parchment paper. Using a small cookie scoop or spoon, scoop out portions of the firm ganache and roll them gently between your palms to form smooth balls. Place each truffle on the prepared baking sheet. Refrigerate again until firm, about 30 minutes.
  3. Coat Truffles: Place Dutch cocoa powder in a small bowl. Roll each chilled truffle in the cocoa powder until evenly coated. Return the truffles to the refrigerator to keep them firm until ready to serve.
  4. Optional Chocolate Dip: For a decorative and flavorful finish, dip the cocoa-coated truffles into melted dark or white chocolate. Immediately sprinkle with flaky sea salt or crushed candy canes for a festive touch. Place dipped truffles back on the parchment-lined sheet and refrigerate until the chocolate shell hardens.
