Description

These Chocolate Berry Bars are a delightful and refreshing frozen treat, perfect for a healthy dessert or snack. Packed with fresh strawberries, blueberries, and raspberries, and topped with a rich dark chocolate layer, these bars are a delicious combination of sweet and tart. The addition of toasted almonds, coconut flakes, and chia seeds adds a satisfying crunch and nutritional boost.

  • 1 cup fresh strawberries, chopped into small pieces
  • 3/4 cup fresh blueberries
  • 3/4 cup fresh raspberries
  • 3/4 cup dark chocolate chips
  • 1/4 cup coconut oil
  • 2 tablespoons coconut flakes
  • 1/4 cup slivered almonds
  • 1 tablespoon chia seeds

Instructions

  1. Melt Chocolate:
    1. In a medium microwave-safe bowl, add the dark chocolate chips and coconut oil.
    2. Melt in the microwave in 1-minute increments, stirring between each, until melted and smooth.
    3. Set aside.
  2. Toast Almonds and Coconut:
    1. Preheat a large skillet over medium heat.
    2. Add the slivered almonds and coconut flakes.
    3. Toast until golden brown, stirring frequently.
    4. Set aside.
  3. Prepare Loaf Pan:
    1. Line a 9×5 inch loaf pan with parchment paper.
  4. Layer Berries and Toppings:
    1. Add the chopped strawberries, blueberries, and raspberries to the loaf pan in layers.
    2. Sprinkle the toasted almonds and coconut flakes, and chia seeds over the berries.
  5. Drizzle Chocolate:
    1. Drizzle the melted chocolate evenly over the berry and topping mixture.
    2. Tap the loaf pan on the counter a few times to help everything settle.
  6. Freeze:
    1. Freeze for 7 hours, or until fully set.
  7. Slice and Serve:
    1. Remove the loaf pan from the freezer.
    2. Holding onto the parchment paper flaps, remove the frozen block onto a cutting board.
    3. Let it thaw for 2-3 minutes, or until you can slice through it.
    4. Using a serrated knife, cut into 8 bars.
    5. Enjoy!

Notes

  • Store: Place bars lined in between with parchment paper pieces to prevent sticking in an airtight container. Freeze for up to 3 months. When ready to enjoy, remove bar on a plate, let thaw for 1-2 minutes and enjoy.
  • You can use other types of berries or fruits, such as blackberries or sliced peaches.
  • For a sweeter treat, use milk chocolate or white chocolate chips.
  • Add other toppings like chopped nuts, seeds, or granola.
  • If you don’t have coconut oil, you can use another neutral oil, but coconut oil hardens nicely in the freezer.
  • For a vegan version, ensure your chocolate chips are vegan.
