- 1 cup fresh strawberries, chopped into small pieces
- 3/4 cup fresh blueberries
- 3/4 cup fresh raspberries
- 3/4 cup dark chocolate chips
- 1/4 cup coconut oil
- 2 tablespoons coconut flakes
- 1/4 cup slivered almonds
- 1 tablespoon chia seeds
Instructions
- Melt Chocolate:
- In a medium microwave-safe bowl, add the dark chocolate chips and coconut oil.
- Melt in the microwave in 1-minute increments, stirring between each, until melted and smooth.
- Set aside.
- Toast Almonds and Coconut:
- Preheat a large skillet over medium heat.
- Add the slivered almonds and coconut flakes.
- Toast until golden brown, stirring frequently.
- Set aside.
- Prepare Loaf Pan:
- Line a 9×5 inch loaf pan with parchment paper.
- Layer Berries and Toppings:
- Add the chopped strawberries, blueberries, and raspberries to the loaf pan in layers.
- Sprinkle the toasted almonds and coconut flakes, and chia seeds over the berries.
- Drizzle Chocolate:
- Drizzle the melted chocolate evenly over the berry and topping mixture.
- Tap the loaf pan on the counter a few times to help everything settle.
- Freeze:
- Freeze for 7 hours, or until fully set.
- Slice and Serve:
- Remove the loaf pan from the freezer.
- Holding onto the parchment paper flaps, remove the frozen block onto a cutting board.
- Let it thaw for 2-3 minutes, or until you can slice through it.
- Using a serrated knife, cut into 8 bars.

Notes
- Store: Place bars lined in between with parchment paper pieces to prevent sticking in an airtight container. Freeze for up to 3 months. When ready to enjoy, remove bar on a plate, let thaw for 1-2 minutes and enjoy.
- You can use other types of berries or fruits, such as blackberries or sliced peaches.
- For a sweeter treat, use milk chocolate or white chocolate chips.
- Add other toppings like chopped nuts, seeds, or granola.
- If you don’t have coconut oil, you can use another neutral oil, but coconut oil hardens nicely in the freezer.
- For a vegan version, ensure your chocolate chips are vegan.
