Instructions

  1. Melt Chocolate and Cream: In a saucepan, gently melt the milk chocolate together with the heavy whipping cream over low heat, stirring continuously until the mixture is smooth and fully combined. Remove from heat and let it cool for about 15 minutes.
  2. Add Almond Extract and Chill: Pour the cooled chocolate mixture into a mixing bowl. Add the almond extract and beat on low speed with a mixer until smooth, about 1 to 2 minutes. Cover the bowl and refrigerate the mixture for about 2 hours, allowing it to firm up for easy scooping.
  3. Form Truffle Balls: Once chilled, scoop the mixture into small ¾ inch balls using a spoon or scoop. Roll each ball in the chopped almonds to coat evenly. Place the coated truffles on a parchment-lined cookie sheet and freeze them for approximately 1 hour to set.
  4. Dip in White Chocolate: Insert a toothpick into each truffle and dip them into the melted white chocolate, fully coating each one. Gently tap the side of the bowl to remove any excess chocolate. Set the dipped truffles back onto the cookie sheet and allow them to set for 30 minutes at room temperature.
