These Chicken Caesar Salad Lettuce Wraps are a healthy and refreshing twist on the classic Caesar salad. Crisp iceberg lettuce cups are filled with tender chicken, crunchy croutons, shaved Parmesan cheese, and a creamy homemade Caesar dressing.

- 1 head iceberg lettuce
- 1/2 cup shaved Parmesan cheese, divided
- 1/2 cup croutons
- 1 cooked skin-on chicken breast, sliced (rotisserie chicken preferred)
- 1 Roma tomato, thinly sliced
- 2/3 cup Caesar dressing (see recipe below)
For the Caesar Dressing:
- 3 tablespoons mayonnaise
- 2 tablespoons shaved Parmesan cheese
- 2 teaspoons olive oil
- 2 teaspoons water
- 1 clove garlic
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon freshly cracked black pepper
- 1/4 teaspoon kosher salt
Instructions
- Prepare Lettuce Cups: Remove the core and root end from the iceberg lettuce. Gently separate the lettuce leaves under cold running water, creating 2 cups from the outer leaves.
- Make Caesar Dressing: Combine all dressing ingredients in a container and blend with an immersion blender until smooth.
- Assemble Wraps: Place an iceberg lettuce cup on a piece of parchment paper. Sprinkle with salt, then layer half of the Parmesan cheese, croutons, chicken slices, and Caesar dressing. Top with tomato slices, the remaining dressing, and Parmesan cheese.
- Wrap and Serve: Roll the lettuce wrap tightly, using the parchment paper to help keep its shape. Wrap tightly in plastic wrap to secure. Cut in half and remove the wrappings before serving.
Notes
- Lettuce: Choose a firm head of iceberg lettuce with large, intact leaves for easier wrapping.
- Chicken: Leftover rotisserie chicken works great for this recipe.
- Croutons: Use store-bought or homemade croutons.
- Make Ahead: Prepare the dressing and lettuce cups ahead of time, but assemble the wraps just before serving to prevent them from becoming soggy.
