Description

Delicious and flavorful chicken burgers topped with a fresh avocado corn salsa, perfect for a summer BBQ or easy weeknight meal.


Ingredients

For the Chicken Burgers

  • 1 1/2 lb ground chicken meat (thighs preferred)
  • 2 scallions, chopped
  • 1 cup shredded cheese (Cheddar, Gouda, Provolone)
  • 1/4 cup mayo
  • 1/2 tsp salt
  • 1/2 tsp pepper

For the Avocado Corn Salsa

  • 1 large avocado, sliced
  • 1 ear of fresh corn, kernels removed
  • 1/8 cup chopped fresh cilantro
  • 1/2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 lime, juiced

Instructions

  1. Chicken Burgers: Place ground chicken in a bowl. Add cheese, scallions, mayo, salt, and pepper. Mix well. Form patties.
  2. Cook patties on a grill for about 5 minutes per side until done.
  3. Avocado Corn Salsa: Cut corn kernels off the cob. Mix with avocado, cilantro, olive oil, lime juice, salt, and pepper.
  4. Serve Avocado Corn Salsa over Chicken Burgers.

Notes

  • You can customize the salsa by adding diced tomatoes or jalapeños for extra flavor.
  • Feel free to use your favorite cheese blend in the burgers.
