Ingredients
Scale
Blondie Base
- ½ cup (113.5 g) salted butter, browned and cooled
- 1 cup (220 g) brown sugar
- 1 large egg, room temperature
- 1 egg yolk, room temperature
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 1 teaspoon cornstarch
- 1 cup (140 g) all-purpose flour
Add-ins and Topping
- ½ cup (about 118.29 g) M&M’s (heaping ½ cup)
- ½ cup (90 g) chocolate chips
- Flaked salt for topping
Instructions
- Browning the Butter: Melt ½ cup of salted butter in a medium saucepan over medium heat. Continue cooking past the boiling point while stirring constantly. Watch carefully as the butter foams and then turns golden brown with a nutty aroma. Once browned, immediately pour it into a cup or bowl and let it cool.
- Prepare the Pan and Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with cooking spray and parchment paper to prevent sticking and ensure easy removal later.
- Mix Wet Ingredients: In a medium bowl, whisk together the cooled browned butter and brown sugar until well combined. Add the large egg, egg yolk, and vanilla extract, then mix until smooth and uniform.
- Add Dry Ingredients: Stir in the cornstarch, salt, and all-purpose flour until just combined, being careful not to overmix to maintain tender blondies.
- Fold in M&M’s and Chocolate Chips: Gently fold the M&M’s and chocolate chips into the batter, ensuring even distribution without breaking the candies.
- Transfer Batter to Pan: Pour the batter into the prepared baking pan and smooth the surface evenly with a spatula. Sprinkle a few extra M&M’s on top along with flaked salt for texture and flavor contrast.
- Bake: Place the pan in the oven and bake for 20 to 23 minutes, until the edges turn light golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- Cool and Serve: Remove the blondies from the oven and allow them to cool completely in the pan before slicing and serving. This helps them set properly and enhances their chewy texture.
Notes
- For extra holiday cheer, add ¼ cup of red and green sprinkles to the batter along with the M&M’s.
- Be careful not to overbake; blondies will continue to firm up as they cool, resulting in the perfect chewy texture.
- Use grams for more precise measurement, especially for flour. If you don’t have a kitchen scale, lightly spoon flour into the measuring cup instead of packing it down to avoid dense blondies.
