Description

These Cheesy BBQ Chicken Stuffed Zucchini Boats are a delicious and satisfying meal that’s perfect for a weeknight dinner. Tender zucchini boats are filled with a flavorful mixture of shredded chicken, BBQ sauce, and gooey cheddar cheese, then baked to perfection. Topped with fresh cilantro and green onions, these zucchini boats are sure to be a hit with the whole family.

Zucchini Boats:

  • Olive oil, for greasing pan
  • 4 medium zucchini, sliced in half lengthwise (look for zucchini that is similar in size)

Filling:

  • 1 1/2 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • 1/2 red onion, finely diced
  • 1 pound (about 2 1/2 cups) cooked shredded chicken breast (can also be from a rotisserie chicken)
  • 1 cup low sugar bbq sauce, divided (I like Stubb’s Spicy BBQ Sauce), plus more if you like it extra saucy
  • 1 1/4 cup shredded sharp cheddar cheese, divided

Instructions

  1. Preheat oven: Preheat oven to 400 degrees. Grease a 9×13 inch pan with olive oil.
  2. Prepare zucchini boats: Using a spoon, scoop centers from zucchini while leaving a 1/4-inch rim to create boats. Place zucchini in the greased pan. Brush with olive oil.
  3. Saute onions and garlic: In a skillet, saute onions and garlic in olive oil. Transfer to a bowl and mix with chicken, bbq sauce, and cheese.
  4. Fill zucchini boats: Spoon chicken mixture into zucchini boats. Top with bbq sauce and cheese.
  5. Bake: Cover with foil and bake for 35-45 minutes until cheese is melted and zucchini is tender.
  6. Serve: Garnish with cilantro and green onions before serving.

Notes

  • You can save the leftover zucchini pulp for another recipe, such as adding it to soups or sauces.
  • Feel free to customize the filling with your favorite ingredients like diced bell peppers or jalapenos for added heat.
