These Cheeseburger Sliders are a crowd-pleasing party food or a fun and easy weeknight dinner. They feature juicy mini burgers loaded with melted cheese, nestled in soft dinner rolls, and baked to golden perfection.

- 2 lbs lean ground beef (90/10 or 93/7 fat content)
- 1/2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 large yellow onion, finely diced
- 1/4 cup mayonnaise
- 8 slices medium cheddar cheese
- 6 ounces medium cheddar cheese, shredded (or use more sliced cheese)
- 24 dinner rolls
- 2 tablespoons unsalted butter, melted, plus more to grease baking sheet
- 1 tablespoon sesame seeds
Instructions
- Preheat and Prep: Preheat oven to 350°F. Grease a rimmed baking sheet with butter.
- Brown Beef and Season: Heat olive oil in a large skillet over medium-high heat. Add diced onion and ground beef, breaking it up with a spatula. Season with salt, pepper, and garlic powder. Cook until beef is cooked through.
- Drain Fat and Add Mayonnaise: Tilt the skillet to spoon off and discard excess fat. Stir mayonnaise into the cooked ground beef.
- Assemble Sliders: Cut dinner rolls in half. Place bottom halves on the prepared baking sheet. Line each with a slice of cheddar cheese. Top with the ground beef mixture, spreading evenly. Sprinkle with shredded cheddar cheese. Place the top halves of the rolls on top.
- Bake: Brush the tops of the rolls with melted butter and sprinkle with sesame seeds. Bake for 12-15 minutes, or until the cheese is melted and the tops are golden brown.
Notes
- Cheese: You can use any type of cheese you like, such as Monterey Jack, provolone, or pepper jack.
- Toppings: Feel free to add your favorite burger toppings, such as lettuce, tomato, pickles, or ketchup.
- Make Ahead: The sliders can be assembled ahead of time and refrigerated for up to 24 hours before baking.
