Description

This Cauliflower Jalapeno Popper Casserole is a flavorful twist on the classic jalapeno poppers, with the added goodness of cauliflower and chicken. Creamy, cheesy, and slightly spicy, it’s a perfect comfort food dish for any occasion.

Chicken and Jalapenos:

  • 1 lb chicken breast
  • 6 jalapenos, halved and seeds removed
  • 2 tablespoons olive oil

Other Ingredients:

  • 6 strips thick-cut bacon
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese, 1/3 less fat
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne
  • 3 cups fresh cauliflower florets, cut into small bite-size pieces

Instructions

  1. Preparation: Heat oven to 375 degrees Fahrenheit.
  2. Cooking Chicken and Jalapenos: Place chicken breast and jalapenos on a baking sheet, drizzle with olive oil, and salt. Place bacon strips on another baking sheet. Bake both sheets in the oven at 375°F for 20-25 minutes until bacon and chicken are cooked.
  3. Prepping Cheese Mixture: In a large mixing bowl, combine ¾ cup cheddar cheese, cream cheese, sour cream, milk, and paprika.
  4. Assembly: Crumble the bacon, shred the chicken, and dice the jalapenos. Add ¾ of the chopped jalapenos, shredded chicken, and ¾ of the bacon to the cream cheese mixture.
  5. Baking: In a 9 x 12 baking dish, layer cauliflower on the bottom. Top with the cream cheese mixture. Sprinkle with ½ cup cheddar cheese, remaining jalapenos, and bacon. Bake at 375°F for 20 minutes or until golden brown.
