Description

These Cashew Chicken Lettuce Wraps are a delightful combination of tender chicken, crunchy cashews, and flavorful seasonings all wrapped up in fresh, crisp lettuce leaves. A healthy and satisfying dish perfect for a light lunch or appetizer.


Ingredients

For the Chicken:

  • 2 pounds boneless skinless chicken breasts, cut into small pieces
  • Salt and freshly ground black pepper

For the Sauce:

  • 1 cup low-sodium chicken broth or stock
  • 2 Tablespoons low-sodium soy sauce
  • 1/2 teaspoon freshly grated ginger
  • 1/4 cup hoisin sauce
  • 1 Tablespoon rice vinegar
  • 2 Tablespoons cornstarch
  • 3 cloves garlic, minced
  • 2 teaspoons sesame oil or substitute canola oil
  • 12 teaspoons Sriracha hot sauce, to taste
  • 3/4 cup unsalted cashews

For Serving:

  • 1 head green leafy lettuce (romaine, bib, or butter)
  • 5 green onions, chopped, divided

Instructions

  1. Season the Chicken: Season chicken pieces with salt and pepper.
  2. Prepare the Sauce: In a small bowl, stir together the chicken stock, soy sauce, ginger, hoisin sauce, vinegar, and cornstarch.
  3. Cook the Chicken: Heat oil in a large skillet over medium heat. Cook seasoned chicken until cooked through, about 5 minutes. Add garlic and cook briefly.
  4. Add the Sauce: Reduce heat to low and add the prepared sauce. Cook until thickened. Add Sriracha sauce to taste. Stir in cashews and most of the green onion.
  5. Serve: Place chicken mixture in lettuce cups. Top with remaining chopped green onions.

Notes

  • You can add a squeeze of lime juice for extra flavor.
  • For a spicier kick, increase the amount of Sriracha sauce.
