Chicken:

  • 4 5-7 oz chicken breasts, pounded to even thickness
  • 2 teaspoon Italian seasoning
  • 2 teaspoon sea or kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cracked black pepper
  • 1 tablespoon olive oil

Additional:

  • 8 oz fresh mozzarella, sliced into 8 even pieces
  • 2 vine-ripened tomatoes, sliced into 1/2” slices
  • Fresh basil leaves, to taste
  • Aged balsamic or balsamic glaze, to taste

Instructions

  1. Prepare the chicken: Pound each chicken breast to even thickness of a little less than 1″.
  2. Season the chicken: Combine Italian seasoning, salt, garlic powder, onion powder, and pepper. Brush chicken with olive oil and sprinkle with seasoning blend.
  3. Grill the chicken: Cook chicken breasts on a hot grill for 5-6 minutes per side until internal temperature reaches 155°F.
  4. Add toppings: Top each chicken breast with mozzarella slices and continue grilling until cheese melts and internal temperature reaches 165°F.
  5. Assemble: Place chicken on a platter, top with tomatoes, basil, salt, and pepper. Drizzle with balsamic vinegar before serving.
