			Chicken:
- 4 5-7 oz chicken breasts, pounded to even thickness
 - 2 teaspoon Italian seasoning
 - 2 teaspoon sea or kosher salt
 - 1 teaspoon garlic powder
 - 1 teaspoon onion powder
 - 1 teaspoon cracked black pepper
 - 1 tablespoon olive oil
 
Additional:
- 8 oz fresh mozzarella, sliced into 8 even pieces
 - 2 vine-ripened tomatoes, sliced into 1/2” slices
 - Fresh basil leaves, to taste
 - Aged balsamic or balsamic glaze, to taste
 
Instructions
- Prepare the chicken: Pound each chicken breast to even thickness of a little less than 1″.
 - Season the chicken: Combine Italian seasoning, salt, garlic powder, onion powder, and pepper. Brush chicken with olive oil and sprinkle with seasoning blend.
 - Grill the chicken: Cook chicken breasts on a hot grill for 5-6 minutes per side until internal temperature reaches 155°F.
 - Add toppings: Top each chicken breast with mozzarella slices and continue grilling until cheese melts and internal temperature reaches 165°F.
 - Assemble: Place chicken on a platter, top with tomatoes, basil, salt, and pepper. Drizzle with balsamic vinegar before serving.
