Description

This Bruschetta Chicken Casserole is a delicious twist on the classic Italian appetizer. Tender chicken is combined with fresh tomatoes, garlic, and basil, then topped with melty mozzarella cheese and a balsamic drizzle. It’s an easy and flavorful dish that the whole family will love.

Chicken:

  • 1 lb. chicken breasts, or tenders, cut into bite-sized pieces
  • 1 Tbsp avocado oil, or olive oil

Bruschetta Topping:

  • 6 ripe Roma tomatoes, chopped and lightly sprinkled in sea salt
  • 3 fresh garlic cloves, crushed or chopped
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 2 Tbsps high-quality balsamic vinegar
  • Sea salt and ground black pepper, to taste, about 1/4 teaspoon each
  • A small handful of fresh basil leaves, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees F.
  2. Cook Chicken: Heat oil in a skillet over medium-high heat, add chicken, season with sea salt and black pepper, and cook until golden brown and almost cooked through.
  3. Assemble Casserole: Transfer the cooked chicken to a 8×8 baking dish, top with chopped tomatoes, oregano, garlic, and balsamic vinegar. Sprinkle with mozzarella cheese.
  4. Bake: Place the casserole in the preheated oven and bake for 18-20 minutes until the cheese is melted and bubbly.
  5. Rest and Serve: Remove from the oven, cover, let it rest for 5 minutes, garnish with fresh basil, and enjoy!

Notes

  • For added flavor, you can also sprinkle some freshly grated Parmesan cheese on top before baking.
  • This casserole pairs well with a side of crusty bread or a fresh green salad.
