			Chicken:
- 1 lb. chicken breasts, or tenders, cut into bite-sized pieces
 - 1 Tbsp avocado oil, or olive oil
 
Bruschetta Topping:
- 6 ripe Roma tomatoes, chopped and lightly sprinkled in sea salt
 - 3 fresh garlic cloves, crushed or chopped
 - 1 cup shredded mozzarella cheese
 - 1 tsp dried oregano
 - 2 Tbsps high-quality balsamic vinegar
 - Sea salt and ground black pepper, to taste, about 1/4 teaspoon each
 - A small handful of fresh basil leaves, chopped

Instructions
- Preheat Oven: Preheat your oven to 375 degrees F.
 - Cook Chicken: Heat oil in a skillet over medium-high heat, add chicken, season with sea salt and black pepper, and cook until golden brown and almost cooked through.
 - Assemble Casserole: Transfer the cooked chicken to a 8×8 baking dish, top with chopped tomatoes, oregano, garlic, and balsamic vinegar. Sprinkle with mozzarella cheese.
 - Bake: Place the casserole in the preheated oven and bake for 18-20 minutes until the cheese is melted and bubbly.
 - Rest and Serve: Remove from the oven, cover, let it rest for 5 minutes, garnish with fresh basil, and enjoy!
 
Notes
- For added flavor, you can also sprinkle some freshly grated Parmesan cheese on top before baking.
 - This casserole pairs well with a side of crusty bread or a fresh green salad.
