Wet Ingredients:
- 3/4 cup mashed ripe banana (about 2 small bananas)
 - 2 tablespoons melted unsalted butter, plus more for greasing griddle
 - 1 large egg
 - 3/4 cup buttermilk
 - 1/4 cup packed brown sugar (dark brown sugar preferred)
 - 1 teaspoon pure vanilla extract
 
To Serve:

Instructions
- Dry Ingredients: In a large bowl, combine flour, baking powder, and salt.
 - Heat a griddle over medium-low heat, grease with butter. Drop batter in ⅓ cup portions onto griddle, spread into circles. Cook until bubbles form, then flip and cook through. Serve hot with desired toppings.
 
Wet Ingredients: In a separate bowl, whisk mashed banana, butter, egg, buttermilk, brown sugar, and vanilla. Add the wet ingredients to the dry and stir until just combined.
Notes
- For extra sweetness, add a handful of chocolate chips to the batter.
