Description

This Boursin Chicken is a quick and easy recipe that’s perfect for a delicious weeknight meal. Tender chicken cutlets are cooked to perfection and then simmered in a creamy and flavorful Boursin cheese sauce with sautéed onions.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion, chopped
  • 3/4 cup chicken broth (low sodium, if preferred)
  • 1 (5.2 oz) package Boursin Cheese with Fine Herbs & Garlic, softened
  • 12 tablespoons chopped fresh parsley (optional)

Instructions

  • Cook Chicken: Cut chicken breasts in half lengthwise to create 4 thinner cutlets. Season with garlic powder, salt, and pepper. Heat olive oil and butter in a skillet over medium-high heat. Cook chicken until golden brown and cooked through (internal temperature of 165°F). Transfer chicken to a plate.
  • Sauté Onions: Add onions to the skillet and sauté until softened and lightly browned. Add a splash more olive oil if the pan seems dry.
  • Make Boursin Sauce: Pour chicken broth into the skillet and stir in the softened Boursin cheese until melted and smooth. Simmer for 5 minutes to allow the sauce to thicken slightly. Stir in chopped parsley, if using.
  • Combine and Finish: Return chicken to the skillet and simmer for a couple of minutes to heat through. If the sauce is too thick, add a splash of chicken broth. Season with salt and pepper to taste. Serve immediately.

  • Chicken Doneness: Use an instant-read thermometer to ensure the chicken reaches an internal temperature of 165°F.
