BBQ Chickpeas:
- 2/3 cup cooked chickpeas
- 3 tablespoons barbecue sauce
Wraps:
- 2 cups lettuce, washed and chopped
- 2 roma tomatoes, finely chopped
- Juice of 1 lime
- 2 wraps
- 5 tablespoons homemade oil-free ranch dressing
Instructions
- BBQ Chickpeas: In a small pot, combine chickpeas and 2 tablespoons barbecue sauce. Heat over medium heat for 5 minutes until warm and sticky. Coat with remaining barbecue sauce.
- Assembling the Wraps: Heat oil in a skillet. Warm each wrap for 30 seconds on each side. Alternatively, microwave for 15-30 seconds. Place wrap on a plate, add bbq chickpeas, lettuce, tomato, ranch dressing, and lime juice. Wrap, cut, and enjoy!
