For the Chicken:
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1 cup buttermilk (or more, as needed)
- 1 tablespoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 1 tablespoon hot sauce (such as Sriracha)
- 1 large egg
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
Instructions
- Make Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, hot sauce, and honey. Season with salt and pepper to taste. Refrigerate until ready to serve.
- Prepare Chicken: In a medium bowl, whisk together flour, cornstarch, garlic powder, paprika, salt, pepper, hot sauce, egg, and buttermilk until smooth. Add chicken pieces and toss to coat.
- Bread Chicken: Place panko breadcrumbs in a separate bowl. Dredge each chicken piece in the breadcrumbs, ensuring it’s fully coated.
- Fry Chicken: Heat ½ inch of vegetable oil in a large skillet over medium-high heat. Add breaded chicken pieces in batches, avoiding overcrowding. Fry for about 3 minutes per side, or until golden brown and cooked through. Drain on paper towels.
- Serve: Drizzle the fried chicken with the prepared Bang Bang sauce and serve immediately.
Notes
- Sauce Variations: Adjust the amount of hot sauce to your preference. Add garlic powder for extra flavor.
- Chicken: Use boneless, skinless chicken thighs for a juicier result, adjusting cooking time accordingly.
- Breadcrumbs: Substitute panko with regular breadcrumbs or crushed cornflakes.
- Oil Temperature: Ensure the oil is hot enough for frying to achieve crispy chicken.
- Make Ahead: Prepare the sauce and coat the chicken up to 4 hours in advance.
