Instructions
- Preheat and Prepare Pans: Preheat your oven to 350°F (175°C) and lightly spray two mini muffin pans with non-stick cooking spray to prevent sticking.
 - Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until evenly mixed.
 - Cut in Butter: Using a pastry blender or two knives, cut the cold butter into the flour mixture until coarse crumbs form, creating a crumbly texture that will give the fritters their tender crumb.
 - Mix Wet Ingredients: In a separate small bowl, whisk together the egg, vanilla extract, and vanilla yogurt until smooth and well blended.
 - Combine Wet and Dry: Pour the wet mixture into the flour mixture and stir until fully combined. Gently fold in the chopped and shredded apples to incorporate fruit throughout.
 - Fill Muffin Pans: Spoon a few teaspoons of batter into each prepared muffin cup, filling them adequately but not to the top to allow room for rising.
