Ingredients

Units Scale

Bacon

  • 12 slices bacon, cooked and crumbled

Guacamole

  • 2 avocados, pitted, peeled, and mashed
  • 6 oz. cream cheese, softened
  • Juice of 1 lime
  • 1 garlic clove, minced
  • 1/4 red onion, minced
  • 1 small jalapeno (seeded if preferred less heat), chopped
  • 2 Tbsp. freshly chopped cilantro
  • 1/2 tsp. cumin
  • 1/2 tsp. chili powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the guacamole mixture: In a large bowl, combine mashed avocados, softened cream cheese, lime juice, minced garlic, minced red onion, chopped jalapeno, chopped cilantro, cumin, chili powder, kosher salt, and freshly ground black pepper. Stir the mixture until it is mostly smooth, but leaving some small chunks for texture. Cover and refrigerate for about 30 minutes to allow the flavors to meld and the mixture to firm up slightly.
  2. Form the guac bombs: Place the crumbled bacon on a large plate. Using a small cookie scoop or spoon, scoop portions of the chilled guacamole mixture and place them on the plate with the bacon. Roll each scoop in the bacon crumbs, coating thoroughly, then shape into bite-sized balls. Repeat this process until all the guacamole and bacon are used up.
  3. Chill and serve: Store the bacon guac bombs in the refrigerator until ready to serve. They can be enjoyed cold or at room temperature as a flavorful appetizer or snack.

Notes

  • You can seed the jalapeno to reduce heat or leave the seeds in for extra spice.
  • Cream cheese softening is best done by leaving it at room temperature for about 20 minutes prior to mixing.
  • Use a cookie scoop for consistent sizing of the guac bombs.
  • These can be prepared a few hours in advance and stored chilled.
  • For crispier bacon, bake on a rack in the oven at 400°F (200°C) for about 15-20 minutes.
