Vegetables & Fruits
- 1 large sweet potato, cut into 3/4″ cubes (about 3 cups)
- 10 oz. small Brussels sprouts, halved (about 3 cups)
- 8 oz. seedless red grapes
Meat
- 1 (14-oz.) cooked kielbasa sausage, cut into rounds
Sauce
- 1/2 cup sour cream
- 1 Tbsp. lukewarm water
- 2 tsp. Dijon mustard
- 1 1/2 tsp. curry powder
- 2 scallions, sliced
Seasonings & Oils
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
Instructions
- Preheat and Prepare Vegetables: Preheat your oven to 425ºF. On a large rimmed baking sheet, toss together the sweet potato cubes, halved Brussels sprouts, red grapes, apple cider vinegar, extra-virgin olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Then add the kielbasa rounds and toss all the ingredients again to distribute evenly. Spread the mixture out in an even layer across the baking sheet.
- Roast the Sheet Pan Ingredients: Place the baking sheet in the oven and roast for about 25 minutes, tossing the vegetables and sausage halfway through cooking. Roast until the sweet potatoes are fork-tender, Brussels sprouts are softened, and the other ingredients are nicely cooked through.
- Make the Creamy Curry Dijon Sauce: While the sheet pan bake roasts, mix together the sour cream, lukewarm water, Dijon mustard, and curry powder in a small bowl. Season the sauce lightly with salt to taste and set aside.
- Serve and Garnish: Once the roasting is complete, drizzle the creamy curry Dijon sauce evenly over the kielbasa and vegetables on the sheet pan. Sprinkle sliced scallions on top for a fresh, bright finish. Serve immediately for a flavorful, comforting meal.
Notes
- Try to cut the sweet potatoes uniformly to ensure even cooking.
- If you prefer a spicier sauce, add a pinch of cayenne pepper to the curry Dijon sauce.
- Leftover sheet pan bake can be stored in an airtight container in the refrigerator for up to 3 days.
- Use a rimmed baking sheet to prevent juices from spilling over during roasting.
