Scale
- 5 medium Granny Smith apples, peeled, cored, and finely diced (about 3 1/2 cups)
- 1/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cornstarch
- 22–24 egg roll wrappers
- 8 ounces cream cheese, softened (about 2 teaspoons per egg roll)
- Cooking oil or cooking spray
Topping:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 cup caramel topping, warmed (for dipping)
Instructions
- Preheat and Prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare Filling: In a medium bowl, combine the diced apples, brown sugar, cinnamon, and cornstarch. Mix well and set aside.
- Assemble Egg Rolls: On a clean work surface, lay out the egg roll wrappers. Spread 2 teaspoons of softened cream cheese in the center of each wrapper. Top with about 2 tablespoons of the apple mixture.
- Roll Egg Rolls:
- Lightly moisten the edges of the egg roll wrapper with water.
- Fold the bottom corner of the wrapper over the filling.
- Fold in the right and left corners to the center, pressing to seal.
- Continue rolling upwards to completely enclose the filling, sealing the edges with water.
- Bake: Place the rolled egg rolls on the prepared baking sheet. Brush or spray with cooking oil. Bake for 15-17 minutes, flipping halfway through, until golden brown and crispy.
- Make Topping: While the egg rolls are baking, combine the granulated sugar and cinnamon in a shallow dish.
- Coat and Serve: Once baked, immediately roll the warm egg rolls in the cinnamon-sugar mixture until evenly coated. Serve with warm caramel sauce for dipping.
Notes
- You can use other apple varieties, but tart apples like Granny Smith work well in this recipe.
- If you don’t have caramel sauce, you can drizzle the egg rolls with honey or maple syrup.
- Leftover egg rolls can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or air fryer for best results.
