Description

This Apple Cranberry Coleslaw is a perfect balance of sweet, tangy, and crunchy textures. With crisp apples, dried cranberries, and chopped walnuts tossed in a creamy and flavorful dressing, this coleslaw is versatile and makes for a refreshing side dish. It’s quick to prepare and ideal for potlucks, picnics, or everyday meals.

Ingredients

Units Scale

Coleslaw

  • 14 ounce bag 3-color coleslaw mix
  • 1 large apple, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 4 green onions, sliced

Dressing

  • 3/4 cup mayo
  • 3/4 cup plain yogurt or sour cream
  • 1/4 cup honey
  • 3/4 teaspoon dried ground ginger

Instructions

  1. Prepare the Coleslaw Mix
In a large mixing bowl, combine the coleslaw mix, chopped apple, dried cranberries, chopped walnuts, and sliced green onions. Toss them together to ensure they’re evenly distributed.
  2. Make the Dressing
In a separate small bowl, mix the mayo, plain yogurt or sour cream, honey, and dried ground ginger. Stir until the dressing is smooth and well combined.
  3. Combine and Toss
Pour the prepared dressing over the coleslaw mixture. Toss everything together until the coleslaw mix is evenly coated with the creamy dressing. Adjust seasoning if needed and serve immediately.

Notes

Recipe Variations:

  • Use freshly shredded cabbage in place of coleslaw mix.
  • Substitute broccoli slaw for coleslaw for a crunchier texture.
  • Add or substitute sliced pears alongside or instead of apples.
  • Use dried cherries instead of cranberries for a different flavor.
  • Swap green onions with red onions, or omit the onions entirely.
  • Add crumbled cheese like feta, goat cheese, or blue cheese.
  • Experiment with different nuts (e.g., pecans, almonds) or leave them out if needed.

Tips:

  • For a less creamy coleslaw, use 1/2 cup mayo, 1/2 cup plain yogurt, 3 tablespoons honey, and 1/2 teaspoon ground ginger for the dressing.
  • This coleslaw can be made a little ahead of time but is best enjoyed fresh for maximum crunch.
  • Granny Smith, Gala, Honeycrisp, or Golden Delicious apples work well in this recipe.
