Ingredients

Units Scale

For the Streusel

  • 1/4 cup (50g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (30g) all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

For the Apple Bread

  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup plain, unsweetened Greek yogurt
  • 1/3 cup whole milk
  • 1 large Granny Smith, Honeycrisp, or Golden Delicious apple, peeled and diced

Instructions

  1. Preheat the oven and prepare loaf pan: Preheat the oven to 350°F (177°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving a 1-inch overhang on the long sides for easy removal after baking.
  2. Make the streusel topping: In a medium bowl, combine brown sugar, granulated sugar, flour, cinnamon, and salt. Drizzle melted butter over the dry ingredients slowly, tossing with a fork to evenly distribute. Mix until crumbly and dough-like. Set aside.
  3. Mix the dry ingredients: In another medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  4. Combine the wet ingredients: Using a hand or stand mixer with a beater attachment, beat the room temperature butter and granulated sugar on medium speed for about 2 minutes until light and fluffy. Add the egg and vanilla extract, continuing to mix until fully incorporated. Next, mix in Greek yogurt and whole milk on medium speed until smooth and creamy.
  5. Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, starting on low speed and then increasing to medium. Beat for 1-2 minutes until the batter is smooth and lump-free.
  6. Fold apples into batter: Gently fold the peeled and diced apples into the batter using a rubber spatula until evenly distributed.
  7. Pour batter into loaf pan: Transfer the batter to the prepared loaf pan and evenly sprinkle the streusel mixture over the top.
  8. Bake: Bake in the preheated oven for 45-50 minutes, or until the streusel topping is golden-brown and a toothpick inserted into the center of the loaf comes out clean.
  9. Cool: Let the bread cool in the pan for 10-15 minutes. Then, use the parchment overhang to lift it out and place the loaf on a wire rack. Allow it to cool for an additional 5-10 minutes before slicing and serving.

Notes

  • Use tart apples like Granny Smith or sweet varieties such as Honeycrisp or Golden Delicious for best flavor and texture.
  • Ensure butter and egg are at room temperature to achieve a smooth, creamy batter.
  • You can substitute Greek yogurt with sour cream for a similar tang and moisture.
  • Storing the bread in an airtight container at room temperature will keep it fresh for up to 3 days.
  • For longer storage, wrap tightly and freeze for up to 1 month.
