Meatloaf Mixture

  • 1/4 cup chopped fresh parsley leaves
  • 1 large egg, beaten to blend
  • 2 tsp. Worcestershire sauce

  • 1/4 cup ketchup
  • 1 Tbsp. light brown sugar

Instructions

  1. Sauté Aromatics: In a medium nonstick skillet over medium-high heat, heat the extra-virgin olive oil. Add the finely chopped onion and cook, stirring frequently, until the onion is soft and golden, about 4 minutes. Next, add the minced garlic and finely chopped rosemary; continue cooking while stirring until fragrant for about 1 minute.
  2. Prepare Meat Mixture: Transfer the cooked onion mixture into a medium bowl and let it cool slightly. Once cooled, add the ground turkey, fine bread crumbs, chopped fresh parsley, beaten egg, Worcestershire sauce, Dijon mustard, kosher salt, and freshly ground black pepper. Mix thoroughly with your hands until all ingredients are fully combined. Divide the mixture into two equal parts and shape each into a loaf approximately 5 inches by 2 1/2 inches.
  3. Air Fry the Meatloaves: Lightly coat the basket of your air fryer with olive oil cooking spray to prevent sticking. Place both turkey loaves into the basket, making sure they have space around them for air circulation. Set the air fryer to 350°F and cook the loaves for about 15 minutes. Then carefully flip each loaf to ensure even cooking. Continue to cook for an additional 15 minutes or until an instant-read thermometer inserted into the center registers 165°F.
  4. Add Glaze and Finish Cooking: While the meatloaves are cooking, combine ketchup and light brown sugar in a small bowl to make the glaze. After the loaves have cooked through, flip them again and evenly spoon the glaze over the top of each. Resume air frying at 350°F for another 2 minutes until the glaze is set and slightly caramelized.
