Description

This Air Fryer Lemon Chicken is a healthy and flavorful dish that’s perfect for a quick and easy weeknight meal. Tender chicken pieces are coated in a crispy batter and then tossed in a tangy lemon sauce, making it a delicious and satisfying dish.

For the Chicken:

  • 2 large boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 green onions, green parts only, chopped

For the Lemon Sauce:

  • 2 tablespoons unsalted butter
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup granulated sugar
  • 2/3 cup low-sodium chicken broth
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch

Instructions

  • Prepare Dredging Stations: Place flour in one shallow dish and beaten eggs in another.
  • Marinate and Dredge Chicken: Toss chicken with soy sauce and sesame oil. Dredge chicken pieces in flour, then dip in egg mixture, and then coat again in flour.
  • Air Fry: Preheat air fryer to 380°F (190°C). Spray the basket with cooking spray. Add chicken in a single layer and spray with cooking spray. Air fry for 12-15 minutes, shaking the basket halfway through.
  • Make Lemon Sauce: While chicken is cooking, melt butter in a skillet over medium heat. Add lemon juice, sugar, broth, soy sauce, and cornstarch. Whisk until thickened and smooth.
  • Toss and Serve: Pour lemon sauce over the cooked chicken and toss to coat. Garnish with chopped green onions and serve immediately.

Notes

  • Chicken: Substitute chicken breasts with boneless, skinless chicken thighs.
  • Doneness: Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (75°C).
  • Sauce: Adjust sauce thickness by adding more cornstarch. Season with salt, pepper, or other spices as desired.
  • Storage: Store leftover chicken and sauce separately in the refrigerator for up to 5 days or freeze for up to 3 months.
