			For the Chicken:
- 2 large boneless, skinless chicken breasts, cut into 1-inch pieces
 - 1 tablespoon low-sodium soy sauce
 - 1 teaspoon sesame oil
 - 2 large eggs, beaten
 - 1/2 cup all-purpose flour
 - 2 green onions, green parts only, chopped
 
For the Lemon Sauce:
- 2 tablespoons unsalted butter
 - 1/2 cup freshly squeezed lemon juice
 - 1/4 cup granulated sugar
 - 2/3 cup low-sodium chicken broth
 - 2 tablespoons low-sodium soy sauce
 - 1 tablespoon cornstarch
 
Instructions
- Prepare Dredging Stations: Place flour in one shallow dish and beaten eggs in another.
 - Marinate and Dredge Chicken: Toss chicken with soy sauce and sesame oil. Dredge chicken pieces in flour, then dip in egg mixture, and then coat again in flour.
 - Air Fry: Preheat air fryer to 380°F (190°C). Spray the basket with cooking spray. Add chicken in a single layer and spray with cooking spray. Air fry for 12-15 minutes, shaking the basket halfway through.
 - Make Lemon Sauce: While chicken is cooking, melt butter in a skillet over medium heat. Add lemon juice, sugar, broth, soy sauce, and cornstarch. Whisk until thickened and smooth.
 - Toss and Serve: Pour lemon sauce over the cooked chicken and toss to coat. Garnish with chopped green onions and serve immediately.
