Ingredients

Units Scale

Filling:

  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tablespoon ground cinnamon

Cinnamon Rolls:

  • 1/3 cup warm water
  • 1 tablespoon active dry yeast
  • 5 tablespoons granulated sugar, divided
  • 1/4 cup unsalted butter, melted
  • 1/4 cup warm milk
  • 1/2 teaspoon fine sea salt
  • 2 to 2 1/2 cups all-purpose flour, or as needed
  • 5 tablespoons unsalted butter, softened

Frosting:

  • 1/4 cup salted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

  1. Make Filling: In a small bowl, combine granulated sugar, brown sugar, and cinnamon. Set aside.
  2. Activate Yeast: In a small bowl, dissolve yeast and 1 tablespoon of sugar in warm water. Let stand for 5 minutes, or until foamy.
  3. Make Dough: In a stand mixer with a dough hook, combine melted butter, warm milk, salt, and remaining sugar. Add the yeast mixture and 1 cup of flour. Mix until smooth. Gradually add remaining flour, ½ cup at a time, until a soft dough forms. Knead for 1-2 minutes.
  4. First Rise: Cover the bowl with plastic wrap and let rise in a warm place for 20 minutes.
  5. Shape Rolls: Preheat oven to 350°F (175°C). Grease a pie dish or baking pan. Punch down the dough and roll it out on a lightly floured surface into a 10×12 inch rectangle. Spread with softened butter and sprinkle with the cinnamon sugar filling. Roll up tightly and cut into 1-inch slices. Place the rolls in the prepared dish.
  6. Second Rise: Let the rolls rise for 15 minutes.
  7. Bake: Bake for 18-20 minutes, or until golden brown. Let cool slightly.
  8. Make Frosting: While the rolls are cooling, beat together softened butter, powdered sugar, vanilla extract, and milk until smooth. Adjust consistency with more milk or powdered sugar as needed.
  9. Frost and Serve: Frost the cooled cinnamon rolls and serve warm.

Notes

  • Storage: Store leftover cinnamon rolls in an airtight container at room temperature. Reheat individual rolls in the microwave for 10-15 seconds.
  • Rising Tip: For faster rising, place the dough in a warm, draft-free place, such as a slightly warmed oven (turn the oven off after warming it slightly).
  • Make Ahead: Prepare the dough the night before and refrigerate overnight. Let it rise for 1-2 hours before baking.
  • Freezing: Freeze baked and cooled rolls in a freezer-safe container. Thaw overnight before serving. You can also freeze the rolled dough; thaw and let rise for 4-5 hours before baking.
